第五弾となる本書は、北西アフリカ沖に浮かぶ大西洋の島、ポルトガル・マデイラへと向かう。写真家ナディーン・イジェウェレ（Nadine Ijewere）によるフィルム写真は、その豊かな食文化と自然の輪郭を捉え、作家イネス・マトス・アンドラーデ（Inês Matos Andrade）によるテキストを通して、マデイラ料理を形づくる技法や食の営み、多様な文化的影響を辿りながら、この島に息づく人々や共同体の姿を描き出している。

本書の中心には、フンシャルの断崖上に建つ「Reid’s Palace」のキッチンから生まれた21品の料理が収められている。さらに、「Violet Bakery」のクレア・プタック（Claire Ptak）、フード・トラベルライターのラファエル・トノン（Rafael Tonon）、シェフのヌーノ・メンデス（Nuno Mendes）による寄稿も収録。序文を寄せたヌーノ・メンデスは、島の外に広がるさまざまな文化圏との交流のなかで育まれてきた、マデイラならではの豊かな食文化に敬意を表している。
