スペイン発のインテリア雑誌『Apartamento』が2016年よりスタートした、年一回刊行のレシピブック『Apartamento Cookbook』シリーズ。

「チューバーなのか、チューバーではないのか」。それが第8号『Apartamento Cookbook #8: Tuber, or Not Tuber?』の問題である。本書では、シェイクスピアの『ハムレット（Hamlet）』の有名なセリフを地下深くへと、自問自答している。そもそも「根菜（tuber）」とは何か？これまでのレシピブックは食卓の定番食材、スパイス、またはスイーツに言及するのに対し、「チューバーなのか、チューバーではないのか」は読者を料理界の「あるか、ないか」に引き込み、様々な根菜を活用したレシピで回答する。各レシピにはからかうような「チューバーチェック」が付属し、標準的な料理本をゲームのように楽しませ、地下深くに潜る様々な美味しさ、チューバーかどうかを読者に紹介する。

ジェームズ・ビアード賞受賞者のコーリー・リー（Corey Lee）、「ノーマ（noma）」のフレーバー化学者であるる、アリエル・ジョンソン（Arielle Johnson）、王室御用達のパン職人クレール・プタック（Claire Ptak）、メキシコ・オアハカの若手シェフ、タリア・バリオス・ガルシア（Thalia Barrios Garcia）、ヴィジュアル・アーティストの題府基之などによるレシピでは、塊茎とその同族の茎が、新鮮なサラダ、フライド・エンユカド、冷たいオルチャータの形をとる。「スイスデザイン賞（Swiss Design Award）」を受賞したグラフィックデザイナー、オルガ・プラダー（Olga Prader）は、遊び心あふれるイラストレーションで本書に命を吹き込み、我々を深く、おいしそうに地下へと誘う。

本書の収益の20%は、版元である「APARTAMENTO」から「エンリケタ ビリャヴェッキア私設財団（The Enriqueta Villavecchia Private Foundation for Child Oncology）」を通じて小児腫瘍と闘う子供たちへと寄付される。

A teasing ‘Tuber Check’ accompanies each recipe, gamifying the standard cookbook and introducing readers to an array of subterranean treats, tuber or not.

In dishes from James Beard Award winner Corey Lee, Noma flavour scientist Arielle Johnson, royal baker Claire Ptak, Oaxacan flagbearer Thalia Barrios García, and visual artist Motoyuki Daifu, among others, tubers and their kindred stems take the form of fresh salads, fried enyucados, or cool horchata. Swiss Design Award winner Olga Prader brings the book to life with her playful illustrations, taking us deeply, delectably underground.
